A simple, everyday dry curry of finely chopped beans tempered with mustard and urad dal, finished with fresh grated coconut. The classic side for sambar-rice or curd-rice.

Method

    Temper mustard and urad dal in oil, then add the green chilli and curry leaves.

    Add the chopped beans, turmeric and salt, then sprinkle a little water.

  3. 3

    Cover and cook on low until tender but still bright green.

  4. 4

    Stir in coconut, toss for a minute and switch off.

Tips & notes

  • Chop the beans as fine as possible for even cooking.
