A peppery, comforting rasam that doubles as a cold remedy. Freshly pounded pepper and cumin give it warmth, while tamarind and tomato keep it bright.
Method
- 1
Coarsely pound pepper, cumin and garlic.

Extract tamarind juice and add crushed tomato, salt, turmeric and the pounded mix.

Boil until it froths and the raw smell goes. Do not let it roll-boil for too long.

Add dal water if using, plus coriander, and switch off as it froths up.

Temper mustard and red chilli in ghee and pour over.
Tips & notes
- Once rasam froths, never boil it hard or it turns bitter.
