Podi Potta Sambar

The everyday weekday sambar. Instead of frying and grinding spices, you stir in ready sambar powder, so it comes together quickly and still tastes full and warm.

Method

    Pressure cook the toor dal and mash it smooth.

    Extract the tamarind juice and stir in the sambar powder and salt.

  3. 3

    Temper mustard, fenugreek and dried chillies in oil, then add asafoetida and curry leaves.

    Add the tamarind mixture and the vegetable and boil until the vegetable softens.

  5. 5

    Add the mashed dal, boil together, thicken with the rice flour and finish with coriander.

Tips & notes

  • Add the sambar powder to the tamarind water rather than to the hot oil so it does not scorch.
  • Fresh, homemade sambar powder lifts this simple sambar more than anything else.
